Diabetic-Friendly Halloween Treat: Graveyard Dirt Cups

Halloween is around the corner and if you’re looking for a treat that’s diabetic friendly, this ones for you! Recipe provided by Everyday Diabetic Recipes.

Ingredients:

  • 1 (1.4oz) box of instant sugar free chocolate pudding, prepared according to package instructions
  • 1.5 cups of sugar-free thawed frozen whipped topping
  • 12 reduced fat chocolate and vanilla crème sandwich cookies divided in half

Instructions:

  1. Divide evenly half of the pudding into 6 dessert glasses or plastic.
  2. Evenly spoon the whipped topping next on top of the pudding.
  3. Spoon the remaining pudding leftover on top of the whipped topping.
  4. In a plastic resealable bag, crush 6 sandwich cookies and then sprinkle the crushed cookies on top of the pudding.
  5. Remove the chocolate half of the remaining cookies and place a cookie on top of the dessert. TIP: use sugar-free chocolate chips for eyes, write RIP in icing piping or add food dye to the creme (and in the layers of the cup) and mix onto cookie!

Want to make it spooky? Add sugar-free gummy worms on top and have the “crawling” out of the dirt!
