Diabetic-Friendly Appetizer: Peppered Shrimp Skewers

Ingredients:

  • 1/3 cups of teriyaki sauce
  • 1/3 cup of ketchup
  • 2 tbsp of dry sherry or water
  • 2 tbsp of reduced fat peanut butter
  • 1 tsp of hot pepper sauce
  • ¼ tsp of ground ginger
  • 1 ½ lbs shrimp (about 32 large raw shrimp) – peeled and deveined but keep tails on
  • 2 large bell peppers – seeds and stems removed
  • 32 trimmed sugar snap peas
  • Wooden skewers

Instructions:

  1. Soak 16 wooden skewers in water for at least 20 minutes.
  2. Preheat the broiler. Make sure to coat the rack with nonstick cooking spray.
  3. Combine the following items in a saucepan: teriyaki sauce, ketchup, sherry, peanut butter, hot pepper sauce, and ginger.

    Bring to a boil and stir constantly. Then reduce the heat to low and simmer uncovered for 1 minute. Remove from the heat and set aside.
  1. Cut the bell peppers into quarter-size pieces.
  2. Take the wooden skewers out of the water and start assembling skewers. Add on 2 shrimp, 2 pieces of the bell peppers, and 2 sugar snap peas to each skewer. Once done brush the skewers with the teriyaki sauce.
  3. Broil the skewers for 3 minutes and then turn, coat with more of the teriyaki sauce and broil for another 2 minutes.
