{"id":1396,"date":"2025-04-14T17:47:56","date_gmt":"2025-04-14T17:47:56","guid":{"rendered":"https:\/\/www.ameriglide.com\/blog\/?p=1396"},"modified":"2025-04-07T17:57:41","modified_gmt":"2025-04-07T17:57:41","slug":"diabetic-friendly-appetizer-peppered-shrimp-skewers","status":"publish","type":"post","link":"https:\/\/www.ameriglide.com\/blog\/diabetic-friendly-appetizer-peppered-shrimp-skewers\/","title":{"rendered":"Diabetic-Friendly Appetizer: Peppered Shrimp Skewers"},"content":{"rendered":"\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/3 cups of teriyaki sauce<\/li>\n\n\n\n<li>1\/3 cup of ketchup<\/li>\n\n\n\n<li>2 tbsp of dry sherry or water<\/li>\n\n\n\n<li>2 tbsp of reduced fat peanut butter<\/li>\n\n\n\n<li>1 tsp of hot pepper sauce<\/li>\n\n\n\n<li>\u00bc tsp of ground ginger<\/li>\n\n\n\n<li>1 \u00bd lbs shrimp (about 32 large raw shrimp) \u2013 peeled and deveined but keep tails on<\/li>\n\n\n\n<li>2 large bell peppers \u2013 seeds and stems removed<\/li>\n\n\n\n<li>32 trimmed sugar snap peas<\/li>\n\n\n\n<li>Wooden skewers<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li>Soak 16 wooden skewers in water for at least 20 minutes.<\/li>\n\n\n\n<li>Preheat the broiler. Make sure to coat the rack with nonstick cooking spray.<\/li>\n\n\n\n<li>Combine the following items in a saucepan: teriyaki sauce, ketchup, sherry, peanut butter, hot pepper sauce, and ginger.<br><br>Bring to a boil and stir constantly. Then reduce the heat to low and simmer uncovered for 1 minute. Remove from the heat and set aside.<\/li>\n<\/ol>\n\n\n\n<ol start=\"4\" class=\"wp-block-list\">\n<li>Cut the bell peppers into quarter-size pieces.<\/li>\n\n\n\n<li>Take the wooden skewers out of the water and start assembling skewers. Add on 2 shrimp, 2 pieces of the bell peppers, and 2 sugar snap peas to each skewer.
